We created our macerated varietal vinegars with the aim of providing a special and distinctive flavour to a high-quality varietal vinegar. Therefore, we select for our maceration process an exquisite herb, the French tarragon, and a bulb of exceptional properties, the shallot.
During the maceration process which is carried out under suitable conditions, characteristic essential oils and perfumed substances are added to the vinegar. The tarragon and shallots have both delicate aromas and flavours that are preserved thanks to this production method. Regular tastings show us when maceration has reached the ideal point of aroma and flavour. The tarragon and shallots are then removed to prevent the excessive invasion of the inherent qualities of the original varietal vinegar.
After the maceration process, the varietal vinegar is aged in the appropriate environment where it continues its development. Over time, the macerated Cabernet Sauvignon vinegar acquires an intense aroma and a specific flavour.
And this is the way our Cabernet Sauvignon vinegar macerated with tarragon and Cabernet Sauvignon macerated with shallot are born.
